"Maaaa! The Meatloaf [Cupcakes]!!!!"

As I've mentioned in other recipes, I'm not much of a dessert person. I don't really enjoy cupcakes, and I especially don't enjoy the frosting. I DO, however, really enjoy meatloaf and mashed potatoes 😍And in honor of my birthday weekend, I made a really delicious and savory spin on a classic celebratory treat.


Serves 4

Ingredients for Meatloaf

  • 1.5 lb meatloaf mix (veal, pork, beef)

  • 1/2 yellow onion, diced

  • 3 cloves of garlic, minced

  • Ketchup

  • Worcestershire sauce

  • 1/4 cup plain or Italian seasoned breadcrumbs

  • Salt, pepper, dried parsley

  • Olive oil

  • Pam vegetable cooking spray

  • Cupcake pan(s) (enough to make 9 cupcakes)


Ingredients for Mashed Potatoes

  • 5 russet potatoes, peeled and diced

  • Whole milk or heavy cream

  • 2 or 3 tbsp unsalted butter

  • Salt and pepper

  • A ricer (optional)

1. Sauté onions and garlic in olive oil until translucent, about 5 minutes.


2. Preheat oven to 350 degrees. Combine meatloaf mix, egg, breadcrumbs, Worcestershire sauce, ketchup, onions, garlic, salt, pepper, and parsley.

3. Stir to combine.

4. Spray cupcake pan(s) with Pam. Roll meatloaf into balls and press them into their cozy little cups.

5. Brush each cupcake with ketchup and top with salt. Put them in the oven, and set a timer for 15 minutes so that you can rotate the trays halfway through cook time. They will bake a total of 30 minutes.


MEANWHILE ...

6. Fill large pot with water, salt heavily, and bring to a boil. Peel and dice potatoes.

7. Rinse potatoes until water runs clear, about 2-3 times. From left to right, you can see the decrease of starch being released into the water. This step is important!


8. Carefully add potatoes into boiling water and cook on high until fork tender, about 15 minutes.

8. When potatoes are done, drain and rinse with hot water 1 or 2 times.


9. Use ricer to "rice" potatoes.

10. While hot, add room temperature butter and milk/cream until the potatoes become the consistency of your liking. Add more salt and pepper. Time to ice!

11. Scoop mashed potatoes into a plastic freezer bag, cut the tip (I added zig-zag), and pipe the mashed potatoes onto the cupcakes. Ask a friend to help you hold the cupcakes still. 🙂

12. Top with bacon bits or your other favorite toppings and enjoy!
